Gene has been under the weather the last few days (I think he ate something that has disagreed with him and it’s just working its way through) so I skipped making dinner (Pepperoni Calzone). Tonight’s dinner was Beef Enchiladas, using the “Meal in a box” by Old El Paso. Yumm. Gene loved it, too. And the dogs were mucho appreciative when the spatula (when dinner was still in the raw beef stage) fell on the ground. (Yes, I cleaned the spatula before resuming cooking).
